Raisin rolls brioche

Simple and super easy Raisin/choc chips rolls brioche




Ingredients :

4 cups all-purpose flour
1/3 cup granulated sugar
4-1/2 active dry yeast
2 tsp salt
4 large eggs, at room temperature
1/2 cup milk, at room temperature
1 cup unsalted butter, cut into 16 pieces, slightly softened
2 large eggs and 1 large egg yolk for the egg wash

 Methods:

-          In the mixer bowl, add all the dry ingredients mixed for on low .
-          Add on all the wet ingredients except butter and mixed for 3min on slow
-          After 3min, speed up for 5min to develop the gluten
-          Turn down the speed and add in the butter while your mixer is still on
-          Mixed it for about 10min to incorporate
-          Oil a bowl and transfer the dough to the bowl, let it fermented for 1 hour
-          Deflate by punching a bit and store in a fridge overnight
-          Take out and cut to a small pieces and roll to a size that you want
-          Spread out raisin or choc chip and roll it and cut to pieces (same as cinnamon rolls)
-          Line on a tray and let it double in size for at least an hour
-          Prepare the egg wash  
-          Bake on 180c for about 20min

Sweet Bun





Step by step method with Ingredients :

760g all-purpose flour
6 tbs milk powder (skim milk powder)
6 tsp instant yeast
160g sugar
1 tsp salt
Water roux 


- Mixed all ingredient in a stand mixer/bowl n mixed on slow than add in
200ml water
2 eggs
-mixed again than add
80g butter
- mixed on high fr 15min/20min
-proof fr 1hr
-punch n shape thn proof fr another 30min
-1egg + 1 yolk fr egg wash
-bake fr 20min on 180°c

WATER ROUX:
50g flour
250ml water
-heat on medium till it become sticky n set to cool

Zebra Cake / Marble cake




Ingredients :

140gm   Bittersweet Choc
170gm   Butter
200gm   Granulated Sugar
3 eggs
1 1/2 tsp vanilla extract
3/4 cup   yogurt
300gm   Flour
2 1/2 tsp baking powder
1/4 tsp    baking soda
120ml   milk


Method :

  • Pre-heat oven to 165 C
  • Melt choc - double boil and let it cool
  • Beat butter and sugar till creamy than add in eggs one at time
  • Add yougurt and vanilla ectract
  • Shift flour, baking powder and baking soda
  • Gradually add in flour and milk. Start and end with flour
  • Weight 1/3 of the flour and mixed it with the choclate 
  • Scoop 2 spoons vanilla batter in the baking pan and top with a spoon of the chocolate mix
  • Repeat till finish.
  • Bake for 35min - 40min
