Lentil Beef Stew

Its incredible that many delicious food have been fused and created due to influences from another culture. This recipes is yet another example of how food and cooking can bring cultures closer. The traditional beef stew fused of different culture which I am submitting to Lentil Recipe Revelations Contest is a very good example of that.

  • 4 carrots - peel and roughly chopped
  • 8 long beans - roughly chopped
  • 1/2 cup red lentil - soak for 2 hours or more
  • 1/2 cup green lentil - soak for 2 hours or more
  • 2 onion - peel and chopped
  • 1 ts garlic paste
  • 1 ts ginger paste
  • 1 ts ground coriander
  • 1 ts fennel powder
  • 1 ts ground cumin
  • 1/4 ts turmeric powder
  • 1/2 ts ground black pepper
  • salt to taste
  • 8 cup of beef stock

Preparation

  • In a big pot add the oil and sear the meat on both sides until it’s evenly browned.
  • Stir in onion, garlic and ginger paste.
  • Pour the beef stock and stir in the dry ingredients, coriander, fennel, cumin, turmeric and black pepper. Bring to boil then reduce the heat. Cover and simmer for 1 hour.
  • After an hour, stir in potato, carrot, green lentil and red lentil into the pot. Cover and continue simmering for another 30 minutes or so.
  • 5 minutes before turning off the heat, stir in the long beans.

This recipe is indeed very flavorful. Normally we will eat it with pita bread as a main dish.

Happy Cooking!
