Lentil Rice with Caramelized Onion

For my third entry in the Lentil Recipe Revelations Contest, I would like to share a very tasty rice with a combination of lentil and sweetness from the caramelized onion. Its best eaten with beef or chicken dishes.

Lentil Rice with Caramelized Onion

Lentil Rice with Caramelized Onion 


  • 1 cup green lentil - boiled until tender (not to over cooked it)
  • 2 cup of Basmathi or Long Grain Rice - soaked for 30 minutes
  • 3 cups of chicken stock
  • 2 large onion - roughly slice
  • 1/4 cups olive oil
  • 1 Tbs ground cumin
  • salt

Boiled lentils until tender but not to soft 

Saute Onion until golden brown or caramelized

Preparation


  • In a pot add the olive oil, saute onion until golden brown or caramelized than scope it out into a plate.
  • In the same pot,add in the rice to the remaining oil and ground cumin. Slowly stir and add the chicken stock.Cover and wait until its boiling.
  • Once boil, add in the lentils. Gently stir and cover the pot.Reduce the heat and wait until the water dry.
  • Add in the onion and stir gently.Turn off the heat and wait for another 10 minutes to 15 minutes before serving.
